NutMeg (Myristica fragrans)

Nutmeg is an aromatic spice obtained from the seed of the tropical tree Myristica fragrans, a member of the Myristicaceae family native to the Banda Islands in the Maluku archipelago of Indonesia. It is renowned for its warm, sweet and spicy aroma, with notes reminiscent of wood, nuts and cloves. Its remarkable aromatic intensity makes it a prized ingredient in international cuisine, particularly in baking, creamy sauces, hot beverages and seasonal preparations.

For centuries, nutmeg was one of the most sought-after spices in international trade. Its ability to transform the flavor of a recipe using only very small quantities explains its historical importance and lasting presence in kitchens around the world.

Organoleptic Properties

Aromatic seed with an oval to slightly rounded shape, a firm surface and coloration ranging from light to dark brown. When cut or grated, it reveals a distinctive marbled interior with brown and cream-colored veins, resulting from the natural distribution of its components. Its aroma is intense, warm, sweet, slightly resinous and spicy, while its flavor combines notes of nuts, wood, mild pepper and subtle bitterness.

Its characteristic fragrance comes from essential oils and volatile aromatic compounds, including sabinene, pinene and myristicin. Whole nutmeg generally preserves its aromatic compounds better than pre-ground spice, making it particularly desirable to grate the seed immediately before use. Its flavor is highly concentrated, and small quantities are usually sufficient to season a dish.

Suggested Uses

Particularly suitable for béchamel sauce, mashed potatoes, gratins, creams, soups, pasta, risotto, spinach, vegetables and cheese-based preparations. Nutmeg is a traditional ingredient in European dishes such as lasagna, croquettes, soufflés and white sauces, where it contributes aromatic depth without overpowering other flavors.

In baking and confectionery, it is commonly used in cakes, cookies, spiced breads, apple pies, puddings, custards, rice pudding and pumpkin desserts. It pairs especially well with chocolate, vanilla, cinnamon, cloves, ginger and cardamom. Small amounts can also be incorporated into coffee, hot chocolate, chai, punches and spiced milk beverages.

For best results, finely grate only a small amount and adjust according to the recipe. Nutmeg should be used as a seasoning in moderate culinary quantities, as excessive consumption may cause poisoning and serious adverse effects.

Format

100 Gr pack of nutmeg (Myristica fragrans) originating from Indonesia. Dried spice intended for culinary use. Whole nutmeg seeds may naturally vary in size, shape and coloration. The specific product form, whole or ground, should correspond to the commercial lot identification.

Storage and Handling

Store in a cool, dry and clean place protected from direct sunlight, preferably in an airtight container. Avoid prolonged exposure to heat, air and moisture, which may accelerate the loss of essential oils and reduce aromatic intensity. Keep away from strongly scented products and handle only with completely dry utensils.

When sold whole, grate only the amount needed to preserve freshness and aroma for a longer period. Once ground, keep tightly sealed and use promptly, as its volatile aromatic compounds dissipate more readily.

Quality and Selection Criteria

Select seeds that are firm, dry, clean and characteristically brown, free from mold, insects, abnormal moisture, deterioration or foreign odors. Good-quality nutmeg should release a warm, intense and spicy aroma when grated, with a characteristic marbled interior and no signs of rancidity.

Uniform size, kernel integrity and preservation of essential oils are important commercial quality attributes. Avoid products with weak aromas, excessive dryness or evidence of improper storage.

Season

The nutmeg tree thrives in warm, humid tropical regions, where fruit production can occur during different periods of the year. In Indonesia, flowering and harvesting cycles vary according to growing region and seasonal weather conditions. After harvesting, seeds are separated, dried and conditioned for distribution, supporting relatively consistent commercial availability throughout the year.

Origin

Indonesia.

The history of nutmeg is closely connected to the Banda Islands in the Maluku archipelago, regarded as its native homeland. For centuries, these small islands were among the world's most important centers of the spice trade, attracting Asian, Arab and European merchants. During the sixteenth and seventeenth centuries, control over nutmeg became a strategic objective for colonial powers, particularly Portugal and the Netherlands, resulting in conflicts and episodes of violence that profoundly shaped the region's history.

One of nutmeg's most fascinating botanical characteristics is that a single fruit produces two distinct spices: nutmeg, obtained from the seed kernel, and mace, produced from the reddish aril surrounding the seed. Both share warm, spicy aromatic profiles, although mace generally has a more delicate character. This small seed therefore represents one of the most remarkable stories in culinary history: a spice originating from a small Indonesian archipelago that helped transform international trade, global cuisine and relationships between continents.
