Traditional Mexican tejocote fruit paste, produced as a firm and concentrated fruit confection with a compact consistency that allows clean slicing into portions, bars or cubes. The Dulmex® presentation is visually distinguished by its characteristic deep burgundy to wine-red color, slightly glossy surface and uniform texture, making it particularly suitable for bakery, pastry, confectionery and high-volume foodservice applications.

Organoleptic Properties

Characteristic deep burgundy to wine-red color, uniformly distributed throughout the paste, with a smooth and slightly glossy surface. Firm, compact, homogeneous and sliceable texture while remaining pleasant on the palate. Sweet, fruity aroma with a concentrated sweet flavor complemented by the subtle fruity acidity characteristic of tejocote.

Suggested Uses

Ideal for direct consumption, traditional cheese pairings, dessert boards, bakery, pastry, fillings, empanadas, tarts, cakes, confectionery and dessert decoration. Its firm consistency allows it to be cut into cubes, bars, slices or uniform portions, making it particularly practical for restaurants, hotels, buffets, catering, commercial bakeries and foodservice.

Storage and Handling

Store in a cool, dry place protected from direct sunlight and heat sources. Once opened, keep properly covered or transfer to a clean, sealed container to prevent dehydration, odor absorption and contamination. Always handle using clean, dry utensils.

Quality and Selection Criteria

Firm and homogeneous fruit paste with good cutting resistance and a consistent burgundy to wine-red coloration. It should retain a clean fruity aroma, characteristic sweet flavor and a surface free from mold, fermentation, abnormal moisture or contamination. The product should produce clean, defined cuts without excessive crumbling or liquid separation.

Tejocote is a traditional Mexican fruit historically used in both cooked preparations and fruit preserves. Ate is produced by cooking fruit pulp with sugar until a concentrated, firm and glossy paste develops. In commercial burgundy-colored tejocote ate, an important distinction should be made between the fruit's natural color and the finished product: tejocote itself does not naturally produce the intense wine-red coloration typically associated with this type of commercial ate. Food coloring may therefore be used in commercial formulations to standardize and intensify its characteristic red-burgundy appearance. The specific coloring agent used in Dulmex® should be confirmed directly from the product ingredient label or manufacturer's specification before being declared in the technical sheet.
