Monofloral mesquite honey (Prosopis spp.) harvested in Guanajuato. It exhibits a very light color (from water white to very pale amber), a mild aroma, and sweet, buttery notes. The “almost white” hue is characteristic of mesquite nectar and does not come from white petals; mesquite flowers are yellow-green catkins. This honey crystallizes quickly into fine crystals, resulting in a thick, creamy texture that is highly appreciated.

Handling: Crystallization is natural and a sign of purity. To restore fluidity, warm gently using indirect heat (for example, place the container in warm water around the pail, avoiding direct flame or overheating).
