Organoleptic Properties
Small, oval and slightly flattened seeds ranging from black to grayish-black, with natural variations between individual seeds. They have a firm, crisp texture that becomes more aromatic and brittle after light toasting. Flavor is toasty, oily and nutty, with earthy notes and a somewhat more pronounced character than white sesame. Heating releases characteristic aromas from the seeds' naturally occurring oils.
Suggested Uses
Ideal for bakery, pastry, Asian cuisine and gourmet applications. It can be used as a topping for breads, bagels, cookies, salads, rice, sushi, noodles, vegetables, bowls, avocado and fish. It is also suitable for granola, snack bars, seed blends, black tahini, pastes, sauces, dressings, sweets and confectionery. Storage and Handling

Quality and Selection Criteria
Mature, clean and dry seeds with reasonable uniformity and their characteristic black coloration and fresh aroma. Product should be free from abnormal moisture, infestation, mold, foreign odors, rancidity and extraneous material. Flavor should be clean, oily and subtly toasted without undesirable bitter or rancid notes. Minor natural variations in seed size and coloration are normal for an agricultural product.
